Destello

Destello, meaning sparkle, is a proprietary Opici Wines label that hails from the acclaimed Cava-producing region of Penedes in the Northeast corner of Spain. It is hand-crafted by a small, family-owned winery that has been producing traditional regional sparkling wines since 1880. Destello Cava upholds the Opici family’s standard for quality and value with a consumer-friendly flavor profile and an attractive price.

The majority of the vineyards are located in the esteemed sub-region of Monsarra, within Vilafranca del Penedes. While a largely Mediterranean climate prevails, the Penedes enjoys a wide variety of micro-climates due to its proximity to the coast and elevations beginning at sea level and soaring to over 800 meters. Soils are very poor in quality, with excellent drainage capabilities, consisting predominately of sand, clay, and ancient oceanic deposits. Each vineyard is planted to a very low density of 2,000 vines/hectare using the traditional Guyot training method. Farming practices are sustainable in nature, as no pesticides or chemical compounds are used to combat pests or fungus. A meticulously selective hand-harvest is carried out each September when all varietals have reached their peak level of ripeness. Destello Cava is produced using the traditional champenoise method in which the secondary fermentation to render the wine sparkling takes place in the bottle. Each grape is vinified separately using native yeasts. The aging far exceeds the appellation’s regulations. Destello is a versatile bubbly that will appeal to many.
