Prosecco Lilac Grapefruit Collins

3/4 oz. Lemon juice

1 oz. Grapefruit juice

3/4 oz. Lilac Shrub (fresh lilacs, Prosecco vinegar and sugar)*

1 oz. Amaro Meletti

1 oz. Gin

2 oz. Club Soda

Add all ingredients into a tin besides the club soda. Add ice and give it a medium shake, add 2 oz. Club soda to the tin. Strain the cocktail out into a Collins glass with fresh ice. Garnish the cocktail with a straw, 3 cucumber ribbons, and some fresh Lilac.

 

*To make the Lilac shrub:
Clean and rinse 6 Lilac branches with flowers. Remove the flowers and drop into a jar. Pour over the Lilac 1 cup Prosecco vinegar and 1 cup evaporated cane sugar. Stir the mixture and let sit for 2 weeks in a container with a lid, making sure to turn over and swirl daily. After 2 weeks fine strain the liquid out and refrigerate until ready to use.
